Taking over the historic black and white bungalow (formerly Tamarind) in the lush surroundings of Labrador Nature Reserve is a new fine-dining restaurant, ASU. With Chef Ace Tan at the helm, alongside his team of chefs from across Asia, expect an elegant culinary journey through Progressive Asian cuisine that marries flavours with healthful elements. 

The ASU experience begins in nature as we stroll through the gardens toward the heritage building. Inside, a cozy living area with plush sofas creates a warm welcome, leading us to three doors, each opening into a unique dining concept—one of which is ASU. Its elegantly simple and warm aesthetics embraces the Japanese concept of wabi-sabi with recycled timber and oxidized bronze. White and earthy hues add to the organic warmth, while its open layout with clean lines naturally draws our eyes to the main centerpiece – the Chef’s Dining Table. It sits 15 persons, we recommend a seat there for a touch of theatrical flair as you watch the chefs at work.

ASU’s debut menu, Origins, is inspired by Chef Ace’s fond memories of local food, reimagined with a contemporary twist. Here, we see stories of Chef Ace’s favourite childhood snacks in the Crystal Dumpling,  with lobster, pickled bamboo shoot, and white fungus encased in a delicate, translucent sphere, and the Oyster Bao —Chef’s take on the classic Fuzhou oyster cake—stuffed with succulent pork jowl and chunks of oyster in a rich, house-made oyster sauce. In the second course, we enjoyed the cold but hearty Jessica’s Duck Soup, a homage to his mother’s recipe that’s reimagined with consommé granita and enriched with ginseng, a stuffed Amela tomato, and free-range duck. We spot a hint of Teochew cuisine in the third course Re: Pomfret, where kanpachi fish paste is piped between the crispy grilled skin and the sweet flesh of the managatsuo. 

Although the four-course menu (S$168++ per person) more than satisfies our stomachs, we’d stretch our appetite (and budget) for supplementary dishes like the Ngor Hiang (S$20++), which sees red-legged prawn and chestnuts in a yuba casing. It even comes with a deep-fried prawn head fritter. For desserts, we loved the sweet and savoury flavours from Yuan Yang(S$15++), the dalgona-style caramel coffee made into a coffee kombucha sherbet and topped with house-made chicken floss.

Note: The menu is refreshed periodically to embrace seasonal eating, highlighting ingredients at their peak for both flavour and wellness.

If you’re craving BBQ with an American twist, Meatsmith is a carnivore’s dream come true. Specialising in elevated wood-fired grills, and slow smoked meats, this joint is known for its juicy, fall-off-the-bone dishes. Their 14-hour Smoked Beef Brisket (S$22) is a hearty favourite, tender and full of deep, smoky flavours. For a taste of the American South, try the Fried Nashville Chicken Sandwich (S$19.80), with layers of pickled cucumbers, mayonnaise, shredded lettuce and house-made potato bun. The iconic 3-hour smoked Pork Ribs (S$36) is another must-try, with with zesty lime, Chipotle, baby Romaine and creamy blue cheese dressing. The industrial-chic setting is perfect for a laid-back meal with a side of craft beer.

Meat-Free: Ki Su Shoujin Omakase

With more people turning to plant-based food, it makes sense for a vegetarian fine dining concept to take its place in the Omakase scene. Ki Su Shoujin Omakase, from the same people behind Joie Restaurant, combines the artistry of Japanese and French cuisine in their lunch (S$88++) and dinner (S$168++) course menu. Instead of raw fish, the chef creatively recreates the texture of seafood with mushrooms and capsicum, ingredients you’d never think could taste like fish. Other highlights on the menu include the appetising Beetroot Cigar which sees apples and mayonnaise wrapped inside a beetroot casing and the  Golden Temaki featuring maitake mushrooms, gold flakes, and an egg yolk, yet delivering the briny taste of oysters, thanks to the clever use of Oyster leaf. A win for both meat lovers and vegetarians.

Aged-Fish: Sushi Kawasemi

Against the convention of using fresh fish in sushi, Sushi Kawasemi stands out for its days-old fish used in Edomae-style sushi. Born at a time when there was no refrigeration, chefs used wet and dry ageing techniques to preserve the fish and its taste. Needless to say, it involves meticulous processes and constant monitoring, especially in humid Singapore. The head chef at Sushi Kawasemi keeps tabs on every step, right down to how the fish was gutted, to ensure optimal taste and texture. Try them in their 18-course Kawasemi Sushi Course (S$188++) which features tender seasonal catches aged for five to seven days, with enhanced umami on Edomae rice. The menu evolves but you can expect the delicious and surprisingly filling meal to end with their signature pillowy soft Tamagoyaki.

Tea-centric: Ichigo Ichie

Tea, usually served alongside Japanese food, gets its time of the day, with Chef Eno incorporating it into the courses at Ichigo Ichie. In its new home at Claymore Connect, the Japanese fine-dining kappo restaurant kicks things off on the high, enriched by the chef’s creative use of tea. Find fresh maguro marinated in Lapsang souchong and shoyu or the refreshing starter of tairagai and renkon served with roselle tea jelly and pickled roselle. The unagi donabe is flavoured with the nuttiness of Dong Ding Oolong tea, while genmaicha lends its toasty flavours to the ice cream dessert served with aritaya soy jelly. Chef doesn’t just stop there, the tea-centric course will soon be accompanied by an upcoming tea bar for more tea-infused programs.

Charcoal-Grilled: Shin Terroir

Unique Omakase Experiences Shin Terroir

A fiery omakase experience ensues once you walk the stone-laid path, past the tree (a real tree sticking through the roof) into this intimate 12-seater restaurant, Shin Terroir. Sit by the marble counter and watch the chefs fire up the perfect skewers over Kishu bincho, charcoal derived from Japanese oak, over the three-tiered custom-made grill. The 15-course menu (S$198++) starts light with familiar appetisers like chawanmushi adorned with awabi and snow crab and onigiri filled with maguro and caviar and concludes with richer flavours in their collagen-rich chicken ramen with quail eggs. The chefs add their touch of creativity to traditional items and this is especially clear to see in the Mille Feuille, a layered delight of crackling chicken skin draped over chicken gizzard and chives. Pair the course with wines and sake from their extensive list, or pop next door to their wine lounge for a nightcap.

Deep-Fried: Tenshima

Tenshima Tiger Prawn Tempura

Deep-fried and crispy are not the usual words you’ll associate with an exquisite omakase experience, but after a visit to Tenshima, you will. Instead of heavy and greasy, Chef Shima presents a series of light and crisped dishes in the Lunch (S$180++) and Dinner (S$400++) omakase menu. To do that, he prepares a fresh batch of batter every 30 minutes and works his highly refined culinary skills frying traditional and rarer tempura items like A5 Miyazaki Tenderloin and sashimi-grade Hotate, each delivering the crisp white retaining its tenderness. His precision and meticulousness mean no oil splattering or dripping on the artisan-crafted Hinoki countertop. Within the myriad options of Japanese food lies the sizzling hot Teppanyaki and Kou Teppan serves piping hot omakase starting at an affordable S$68++. Led by Chef Sawada Ko, the restaurant offers an innovative dual-teppan concept, where you can watch the chef’s fiery action at the central griddle and enjoy personalisation on the personal teppan. The courses start with seasonal appetisers and are followed by mains like the slow-cooked Japanese pork and seasonal prime fish, before moving to heartier options like the mini okonomiyaki, Japanese A5 Wagyu kamameshi or garlic rice. We enjoyed the Seasonal Fish Cartoccio with fish and clams cooked in foil during our tasting. Pair your meal with a sake-tasting flight for an additional $15.

Sun-Lit: Sushi Hare

Sushi Hare Unique Omakase experience

Sushi Hare, just like its name suggests, is a sunny retreat located in the centre of the CBD. Combining the Japanese spirit of Shokunin and the Taiwanese value of Hospitality, our experience here felt so warm and homely that we didn’t even notice the heavy rain outside.  Taiwanese-born Chef Angus brings part of his heritage into the omakase courses here like the Hotaru Ika, inspired by Taiwanese braised pork rice, with rice infused with the umami from Botan Ebi prawn heads topped with binchotan and wara straw-grilled firefly squid. Dip the Tsukemen-inspired Chuutoro noodles in the housemade dipping sauce and find the prized horsehair crab Kegani served in a refreshingly unique way, with dashi jelly and crab roe. This is one of those that’ll warm your soul and belly.

Zen-themed: Sushi Sato 

Sato Sushi

Nestled within the lush greenery of Dempsey, Sushi Sato offers a slice of Japan with its wood-clad space and a manicured zen garden by its entrance. The intimate nine-seater restaurant is centred by a 200-year-old Hinoki wood counter where you’ll feast on the Lunch (starting from S$168++) and Dinner (starting from S$400++) omakase courses. Using only fine ingredients, the chefs embrace the simple but profound Edomae style of preparation to highlight the natural flavours and sweetness of the season’s harvest. As a fine dining experience, the approachable lunch course sees fresh catch like Chuutoro and Hamachi, and prized delicacies like Isakai, and Hokkaido Uni atop delicious Tsuyahime rice seasoned with Chef Sato’s unique blend of Japanese red vinegars. Besides savouring the sushi, we also loved the flavourful trout soup that warmed our bellies.

Beef-Focused: Fat Cow 

Fat Cow Wagyu Omakase

One for beef lovers, Fat Cow offers a hearty Dinner Wagyu Omakase (S$290++ per person) which features beef cuts from around Japan. From Sendai to Miyazaki and Kagoshima, Chef Shingo spotlights the flavours of each variant by pairing and cooking them in a variety of ways. Find Hida A5 Wagyu served in a steamed pumpkin bun with Okinawa brown sugar and Ohmi A5 Wagyu in Sukiyaki style. Taste Kyoto A4 Wagyu in Shabu Shabu with Saikyo Miso and Toriyama A4 Wagyu Carpaccio is dressed in black truffle and gold dust. We really liked how each variant was made to shine in taste and texture. This lavish meal is perfect for those on the Keto diet and even if you aren’t, trust us, it’s still worth the calories.

Sleek booth seatings, moody lighting and a nonchalant 70s vibe – that is what you’re in for when you book a dinner at Hevel, the latest culinary venture of the same team behind Marcy’s and Parliament Bar. Joining the Keong Saik Road enclave next to some of our favourite restaurants like COL, the contemporary European dining experience stands as its own, with plenty to offer in its refined and communal dishes.

Marking his solo debut here is Chef Stefan Liau, with an impressive background in Michelin-starred restaurants across Hong Kong, Tokyo, and Singapore. Not to forget his tenure at The Mandala Masters, where he collaborated with culinary legends such as Yoshihiro Narisawa, Gaggan Anand, and Manish Mehrotra. Chef Stefan’s first playful tasting menu at Hevel, priced at S$138++, offers a delightful journey through a myriad of textures, flavour combinations and seasonal ingredients. Here’s our review and thoughts on the new space:

Amuse Bouche & Small Plates

The menu kicks off with a trio of snacks, including innovative treats like Cashew & Banana, a sweet and savoury bite to get the appetite started. The all time favourite Chicken Liver, given a new touch with hints of Xeres, apple and caramelised onion, all topped on a melt in mouth base. The Tuna & Nori was refreshing, and rich, with a hint of saltiness from the caviar and sweetness from the milk bread. Nonetheless, the highlight of the night for us was the Custard, a light and creamy egg custard. Doused in between you’ll find briny New Zealand mussels, pops of ikura bursts and sweet onion sauce to tie the dish altogether.

The small plates paired ingredients that we never expected to put together. The Mackerel, for instance, was plated along with a sweet and tangy passion fruit sauce. Quite sour on its own, interestingly, the brininess of the fish cancels out the sourness from the sauce. The daikon adds a bit of sweetness and soft texture. The Rye Soft Roll, was a little dry for us on its own, but the sakura wood smoked butter made up for a nice companion. The Potato Hash essentially offered two varying tastes. The dish is to be split in the middle, with one end offering creamy umami textures of Uni, in contrast to the crunchy and refreshing and slightly bitter-sweet leek end. Unfortunately we felt that the mushroom emulsion got a bit lost and perhaps overpowered by the Uni here. The Octopus was another great bite, featuring a smokey piquillo pepper sauce, a hint of wasabi oil, garlic and salsify crackers.

Mains

For the main course, guests can choose between the porcini-rubbed Iberico Presa or grilled Short Ribs, each accompanied by seasonal sides. We opted for the former which offered a cauliflower puree and a sweet and a tad too salty blueberry sauce. For the next course, the delicate Duck breast offered a wholesome take, steeped in white onion foam, roasted barley and the ultra luxe black winter truffle. We felt more than flavour, the chef was showcasing his intricate grasp on texture in this dish. If you need another round, feel free to ask the staff to get a quick refill!

Desserts & Beverages

The journey concludes with delectable desserts like Earl Grey Pudding featuring sencha earl grey and a crispy biscuit or the summer ideal Strawberry & Cream with  strawberry jam, yuzu and quintessential basil syrup.

Hevel’s paired beverage program is also a standout feature of the dining establishment – championing fortified wines by small producers and family-owned estates, with a maximum production limited to 20,000 bottles per label.  The extensive wine list features the likes of light and floral pinot blancs like the Amélie & Charles Sparr 2019, and the Raats Family Vinyards 2020 Cabernet Franc, a medium to full body gulp with a fruity taste that lingers. The cocktail pairing menu feature creative twists on classics like Hevel Martini and Vieux Carré, as well as showcasing spirits like sherry, cognac, and whiskey.

From the meticulously crafted dishes to the unique beverage program, and stylish ambiance, HEVEL promises a refined dining experience that marries European roots with a new mordern inspiration.

And that’s precisely what Chef Kenjiro ‘Hatch’ Hashida did. Inspired by the profound message from his very first fortune cookie, he created his culinary stage – The Hashida Universe. This space brings Hatch’s philosophies to life, weaving narratives and memories with the quintessence of Japanese cuisine – all meticulously expressed in the artful Omakase courses. Our journey through the universe and its nine-course menu was filled with pleasant surprises, enlivened with Hatch’s stories, and peppered with fascinating discoveries. This is our review of Hashida Singapore.

Chef Hatch Playing to Explore

Defying the age-old admonition of “don’t play with your food,” Chef Kenjiro ‘Hatch’ Hashida was encouraged to play with his. From honing his delicate knife skills by slicing superglue from his thigh to engaging in a playful “eat the fish” game with his father, Hatch honed his culinary finesse while working from the bottom up in his father’s restaurant, Hashida Sushi Tokyo. Even though he made his first dish at the tender age of three, Hatch wasn’t always a chef. He created and sold art pieces before bringing his creativity back into the culinary world. Ten years later, in Singapore, Hatch expanded his playground with a new restaurant-in-restaurant concept, Abura Kappo, set around the fundamental element of oil (Abura).

Step into The Hashida Universe

Every part of the interior is thoughtfully put together. A Sandō pathway guides visitors through the distinctive torii entrance into the 12-seater main dining hall, likened to a sacred hall. Look up, and you’ll see a washi paper structure suspended from the ceiling; look around, and you’ll notice gradients of grey depicting a day-to-night transition, paying homage to suppliers who work through the night. At this point, we started to draw connections to the little astronaut peering through the ceiling in the hallway as if welcoming us to an entirely different planet.

Beyond the main dining hall, the hallway leads to two 7-seater private rooms and holds a few intriguing discoveries. A 36.9cm concrete slab protrudes from the wall positioned directly opposite the grill in the main dining hall to form an avant-garde display of guardian lions, commonly found in Shinto Shrines. Walk past the room that looks like an offertory box (saisen-bako), and you’ll find a sign of “happiness” hanging above the room with a painting of the mythical yatagarasu, a three-legged crow, by Hatch.

Adding New to the Old

Chopstick message from Hashida Singapore

Instead of a fortune in a cookie at the end of the meal, Chef Hatch begins with a message hidden in the chopstick holder. Our message was a poem by Chef, warming our hearts with childhood memories.

Blue cheese chawanmushi

To start us off, Chef Hatch takes the traditional chawanmushi and adds a bold twist with the Blue Cheese Chawanmushi. Well-executed, the unexpected delivered an impactful yet complementary punch without the blue cheese being too overpowering. Following our lip-smacking start, Chef Hatch serves up his signature Ankimo dish, beautifully adorned with flowers and leaves. The creamy monkfish liver was slightly caramelised on top, adding a sweet note to the “foie gras of the sea”. Accompanying it is a mix of persimmon, coffee-infused beans nestled within the flower, and jelly made of yuba, crab and radish. Chef Hatch crafted this as a showcase of the progressive nature of Japanese cuisine in light of molecular gastronomy.

Simple yet profound, Chef Hatch reinvented fish paste noodles and modelled them after the delicate texture of angel hair pasta with the chewiness of yellow noodles. The Uo Somen is a cold and refreshing noodle dish with hints of umeboshi in the light, savoury soup, served alongside a tender slice of duck. With such distinct Japanese flavours, it’s hard to imagine that a bowl of soup in Bangkok inspired this. This introspective exploration perfectly sums up his philosophy of drawing on past experiences to create something new – shōmi hakkei.

Never been much of a fan of eggplants as vegetables (although they really belong to the berry family), but eggplants as desserts? Fascinating! In the Lemon Nasu Tiramisu, Chef Hatch pairs eggplant with lemon to create a refreshingly sweet and tangy dessert, a nod to the chef’s innovative spirit.

The comforting Potato, Onion, and Miso Soup transports us to the early days at Hashida Tokyo. Besides potato being his father’s favourite food, this hearty soup is a flavourful throwback to the staff meals that Chef Hatch had when working alongside his father. The soup, made with a base of prawn broth, carries rich umami flavours, making it extra tasty. And when it comes to Chef Hatch’s favourite, it is the Kamasu (Japanese barracuda), a fish he tries to serve as much as possible. He recalls how his father would engage him in an “eat the fish” game – a challenge to eat it as fast or clean as possible. Chef Hatch honed an intuitive understanding of fish bone structure through these games. 

Despite omakase often portrayed as a revered and sometimes intimidating dining experience, Chef Hatch interweaves stories, play, and, of course, great taste, making a meal at Hashida a unique and delightful experience.

Originally operating as a unique beauty salon concept that served authentic Manado snacks alongside beauty services, Restoran Beautika is now a local favourite for the bold and spicy cuisine of North Sulawesi. Beautika’s expansive menu features a myriad of Manadonese specialties like Ayam Rabe Rica, marinated shredded chicken with spices and citrus and Udang Woku – spicy prawns in an aromatic paste that includes chili, turmeric, ginger, and basil.
