The Great Lobster Feast, available every Friday and Saturday night, is a shellfish-heavy spectacle for those who like their decadence served hot, grilled, or poached on ice. Its bright acidity makes you salivate and that’s why it pairs well with every course but it is not an aperitif! 

Now that Singapore has its first dedicated champagne bar, Convivial Champagne Bar, we asked its owner and sommelier, Yeo Xi Yang to shed light on this happy drink in time for the festivities. So, before you sip on your next sparkling, know your champagne to drink better and enjoy better!

The Lure of Champagne

So, really, what makes Champagne so special? For Yang, it is the “the verve, energy and emotion” of champagne that made him fall deeply in love with it. “Champagne is such a joyful drink, frequently associated with celebration and occasions, and perfectly refreshing for our tropical climate!” he enthused. Its association with celebration is said to date back to the Belle Époque era in Europe. During the late 1800s to early 1900s, it was enjoyed by the wealthy at events, cementing its status as a symbol of joy. Today, this image persists through mainstream media and culture, where celebratory moments often begin with the iconic pop of Champagne.

After the pandemic, Singapore—being a gastronomic hub—was primed and ready for its first dedicated Champagne bar. Enter, Convivial Champagne Bar, a cosy setup near Boat Quay, founded by award-winning sommelier Yeo Xi Yang, offering a carefully curated selection of about 200 Champagne labels, including red, white, and orange wines, as well as artisanal cider.

Did you know? The name “Champagne” is legally reserved in European Union countries for sparkling wines made and bottled within 100 miles of France’s Champagne region. Outside of this region, similar sparkling wines are known as Crémant in other parts of France, Prosecco in Italy, Cava in Spain, and Sekt in Austria and Germany.

Champagne is wine that requires more work and processes. Instead of a singular fermentation, wine makers have to ferment it twice to develop the signature toasty and bready character, along with the fine effervescence and a creamy mouthfeel, as opposed to a soda-like carbonation. After the first fermentation, all champagne begins as a clear white or rosé wine, regardless of white or red grapes, known as Vin Clair. It then undergoes a second fermentation in the individual bottles, where the wine rests for months to interact with dead yeast or lees. 

Contrary to popular belief, Champagne shouldn’t be served ice-cold, as over-chilling dulls its aromas and flavours. Instead, aim for 5–7°C for young Blanc de Blancs to fully enjoy the fresh and crisp notes or 7-10°C for older or barrel fermented ones to take in the bold and rich flavours. To fully appreciate your Champagne, serve it in a Champagne flute or a white wine glass, and engage your senses—sight, smell, taste, and touch—as you sip your way to bliss. The magic touch? Enjoy it with your nearest and dearest.

Choosing Your Champagne

The first step to choosing your Champagne is to understand the terms on the labels. You’ll see French terms like Brut or Extra Brut which indicates the sweetness levels. Brut has less than 12g of sugar per litre, while Extra Brut has half of that. Blanc de Blancs tells you that this is a white wine from white grapes, typically Chardonnay, while Blanc de Noirs refers to white wine made from red grapes. A Non-Vintage (NV) Champagne contains multiple years of harvest, creating a consistent taste profile across batches. Because the same quality and taste can be expected, most Champagne houses call these wines the “heart and soul of their winery.” When you see Cuvée, it refers to one of two things. It can simply mean “Edition” when producers release multiple editions of the Champagne each year or it can refer to the best-quality juice, specifically the first 2,050 litres pressed from 4,000 kilograms of grapes.

A well-made Champagne offers balance and complexity, delivering a symphony of flavours and textures. It features bright acidity with a refreshing salinity that invigorates the palate, complemented by toasty aromas of brioche and pastry from extended lees aging. The hallmark of quality lies in its fine effervescence—creamy, persistent bubbles that elevate the drinking experience. Its complexity can cover all sweet, sour, salty, bitter, and even umami flavours, making every sip intriguing. Above all, it should leave you eager for more!

Know The Grapes and Regions

The Champagne region is divided into four main sub-regions, each contributing distinct characteristics to the wines produced. Montagne de Reims is known for noble, structured wines dominated by Pinot Noir, offering elegance and complexity. Vallée de la Marne offers robust fruit-forward wines with a spotlight on Pinot Meunier. Chardonnay is the star at Côte de Blancs, producing refined and elegant Blanc de Blancs. Move south to Côte de Bar, known for lesser-known grape varieties that produce riper and more structured wines due to its warmer climate.

Seven primary grape varieties are cultivated within the region, including Chardonnay, Pinot Noir, and Pinot Meunier—the most widely used—as well as Pinot Gris, Pinot Blanc, Arbanne, and Petit Meslier. A new addition, Voltis, was recently introduced but won’t be market-ready for several years, according to Yang.

When choosing a Champagne for pairing, focus on balancing the Champagne’s acidity, effervescence, and flavour profile with the texture and richness of the food. For example, a fresh and crisp Blanc de Blancs cuts through the richness and fried foods like fried chicken (move over chimaek!) or tempura. While barrel-aged Champagnes with richer and more complex flavours will complement dishes like poached or grilled seafood in cream sauce, charred vegetables like brusselsprouts or kai lan, and it even goes well with sio bak (crispy pork belly). Or just skip the hassle and head to Convivial for cold cuts, yummy starters like Ngoh Hiang (S$20++) and Crab Cakes (S$28++), and mains like Barramundi Fillet (S$32++), and let Yang and his team delight you with their Champagne pairing recommendations.

The World’s 50 Best Bars 2024 list has been revealed, and it’s a true celebration of the finest cocktail havens from every corner of the globe! This year, the competition was fiercer than ever, with 28 cities serving up some seriously innovative drinks and experiences. Leading the pack is Handshake Speakeasy in Mexico City, crowned No.1 for the first time – a huge milestone for Mexico. This sleek speakeasy is all about art deco decor combined with cutting-edge cocktails like the Matcha Martini, Olive Oil Gimlet, and Saffron – we can see why it’s a world favourite!

Among the top ten, Mexico’s Handshake Speakeasy is followed by Hong Kong’s Bar Leone at No.2, an exciting newcomer that also took home the Disaronno Highest New Entry Award. Barcelona’s Sips ranks third, while London’s Tayēr + Elementary takes the fourth spot, maintaining its reputation as one of Europe’s finest. Singapore’s own Jigger & Pony holds the No.5 spot, reinforcing its status as a bar that combines stellar service with world-class cocktails. Other standout mentions include Line in Athens (No.6), Tres Monos in Buenos Aires (No.7), and Zest in Seoul (No.9), which also snagged the Ketel One Sustainable Bar Award.

Asia’s Cocktail Renaissance & Exploring New Cocktail Frontiers

Singapore had a remarkable showing this year, with four bars making the list. In addition to Jigger & Pony, Nutmeg & Clove came in at No.28, and newcomer Analogue Initiative secured No.47. Atlas, a perennial favourite known for its opulent art deco setting and gin collection, ranked No.43. Singapore’s continued dominance in the bar scene is further highlighted by Cat Bite Club, which received the prestigious Campari One To Watch Award, suggesting it’s one to keep an eye on for future editions of the list.

Beyond Singapore, Asia saw notable success. Hong Kong’s Coa, joined Bar Leone in the top 50 list, coming at (No.18). Seoul’s Zest came in at No.9, while Tokyo’s Bar Benfiddich and newcomer Virtù ranked No.25 and No.42, respectively. Bangkok’s BKK Social Club took the No.12 spot, and Bar Us joined the ranks at No.41. This year’s list underscores Asia’s thriving bar culture, with creative concepts and expertly crafted cocktails continuing to win over international critics.

Moreover, the diversity of the cocktail scene really stands out this year. Bars from cities like Guadalajara’s El Gallo Altanero (No.48) and Bogotá’s La Sala de Laura (No.44) are proof that top-tier cocktails are emerging beyond the usual capitals. It’s a great sign for those on the lookout for unique cocktail experiences in new places.

Stepping into Fiasco by Juice, the newest addition to Tiong Bahru’s residential enclave, feels like entering a cosy café in Bali—non-pretentious, relaxed, and brimming with charm. The decor, a blend of retro and contemporary styles, creates a warm, inviting atmosphere that complements the restaurant’s ‘simple but better’ philosophy. Led by Chef Haran Kumar, formerly of Michelin-starred kitchens, Fiasco by Juice, presents a menu that seamlessly fuses Modern European dishes with vibrant Southeast Asian flavours, offering a dining experience that is both elevated and approachable.

Something we’d definitely be returning for is one of Singapore’s largest and most diverse wine lists, offering affordable selections for both wine lovers and casual drinkers. Our pick of the night was the Macon Verzé, Domaine Jules Desjourneys 2019, for its crisp green apple, white flowers and lemon notes.

The menu is a playful celebration of produce-driven cooking, with highlights like the Dry Aged Japanese Snapper, which comes with a beautifully tangy mandarin kosho-beurre blanc. Something even our friend who does not like coriander, enjoyed the Mussels, bathed in rich Thai green curry butter and served with house-made flatbread and a refreshing Thai salad. For something lighter, the Black Bean Dip with homemade flatbread and guajillo butter was also a great to munch on as the table conversation continued to thrive. Here’s a secret, the friendly staff were happy to supply us with more flatbread to go along our dip, when we kindly requested. Something that you won’t find on the menu, but Chef Kumar might be happy to whip up for you is his take on the Bebek Guling, with the richness of sambal and tender duck.

Beyond the dinner menu (available from 5.30pm-9.45pm), We’re keen on heading down for lunch (11.30am-2.30pm), drawn back by the promise of the deli-style Sandos in iterations like Lamb, Egg Mayo and Pesto Mozzarella, along with dessert options like the Balinese Vanilla Bean Ice Cream.

Where old meets new in elegance and warmth, Manhattan Bar not only keeps the charm of old New York alive, but it even infuses a sense of glamour and grit with its new bar concept. Walk in to Manhattan Bar and you’ll find that nothing has changed in this softly lit space. The glowing marble bar still presides over the cosy nooks and leather seats, and the immaculately dressed staff still serve their best smile and service. What’s different is the slight flurry of activity at a corner where a private space once sits. Shrouded by heavy curtains, it leaves much to the imagination what secret it conceals. Traverse beyond, if you dare, and you’ll enter the alter-ego of Manhattan Bar – East47.

Space and Inspiration

Step through the curtains and you’ll arrive at the glitzy new world of East47, where soft lights and leather seats are traded for reflective steel accents, a black mirrored ceiling, and Barovier & Toso Opera Venetian crystal lights which instantly brighten the space. And the first person to greet you will be Marilyn Monroe, immortalised in a silkscreen painting by Andy Warhol. TheGold Marilyn Monroe(genuine, by the way), alongside other artworks by Andy Warhol and Alana Dee Haynes adorn the silver foil-like walls, with blue Breuer chairs and a blue with silver carpet grounding the space. 

Tomato Sauce

While some may relate East47 to a speakeasy, it is more of a bar-in-a-bar concept, or for us, an alter-ego, Mr Hyde to Manhattan Bar’s Dr. Jekyll. This intimate 12-seater space draws inspiration from Andy Warhol’s Silver Factory, situated on East 47th Street in Manhattan. More than the parties and gatherings it was known for, the Silver Factory became the epicentre of art and counterculture, where unbridled creativity thrived. Especially so for Andy Warhol, who involved many of his guests in the making of his legendary silkscreen prints and lithographs – from getting their opinions to having them churn the artworks out like an assembly line.

Just like the Silver Factory, the cosy space at East47 draws you in, inviting conversations and interactions over cocktails and bites, as time slips away unnoticed. 

Cocktail and Culinary Craft

Instead of artworks, East47 channels that same creative fervour into crafting their cocktail and culinary program. Much like an innovation hub, expect playful mixes and artful twists to their evolving menu that will feature new cocktails now and then. (Keep up with them on socials to find out!). From the brilliant minds and hands of Head Bartender Antonino Donato, Assistant Bar Manager Riccardo Lugano, and Chef de Cuisine Carolyn Or, East47 debuts with a curated selection of seven cocktails and dishes in Volume 1: High Low. Each cocktail is paired with a dish and you can choose to have Degustation Pairing of Three at S$148++, or enjoy each on its own.

Cosmo Marilyn and Chawanmushi

The menu is designed around Warhol’s artistic style and influences combining high art and pop culture. It even draws inspiration from iconic figures like Marilyn Monroe in Cosmo Marilyn (S$28++). The refreshing cocktail mixes vodka and tequila with milky oolong tea, accented with gooseberry, passion fruit, and pecan nuts. It makes a good starting pair with Chawanmushi (S$28++) made of tea egg custard and crowned with fresh Hokkaido uni. Matching the colours of the seats and carpet, the Melon 54 (S$28++) turns blue with Spirulina, imparting a slight herbaceous flavour to the bubbly dual rum-based drink. This pairs with the stingray Taco (S$18++) topped with zesty scallion sour cream and wrapped with compressed purple cabbage.

Miss Brown x Duck

Have some fun with the Space Daiquiri (S$28++) – Clairin Le Rocher rum, engenho aged cachaça, and dragon fruit hot sauce – that comes with cotton candy floss! An aromatic and delicious boost comes with Miss Brown (S$28++), which includes Matusalem rum, floral coffee, and a spritz of lavender perfume. Have it on its own or pair it with Duck (S$20++) that’s foie gras torchon in a brioche bun. Drink your dessert with Pie (S$32++), a milkshake-looking drink with Ardbeg 10 whisky, rum, and pineapple juice, complete with cream and gorgonzola cheese. This is paired with Silver (S$18++), an apple compote cheesecake, perfect for sweet endings.
