Translating to water and flour in Italian, Acqua E Farina is all about the simple authenticity of Italian cuisine. Expect hearty dishes from the North to light and fresh flavours from the South, and everything in between. Specials from their newest outlet include the Tagliatelle al Cacao con Gamberetti e Nduja (S$36++) which spotlights handmade cocoa pasta tossed in a luscious sauce with a light kick from the spicy nduja salami paste – you’ll want to save your bread to mop up this sauce. Even pizza is done differently here; the Montanara (S$34++) is fried and baked to a crisp and fluffy perfection and topped with Italian mozzarella, homemade pork sausage, and creamy burrata and deliciously done with a nod to tradition.

ASU just opened

In a seamless blend of tradition and global techniques, ASU restaurant brings a deep reflection and celebration of Asian flavours and ingredients, with Chef Ace Tan at its helm. Its opening menu, “Origins,” (S$168++/ person) pays tribute to Singapore’s heritage with a twist on the chef’s childhood favourites like the Crystal Bao which boasts a literal crystal-like sphere and the Shunde Yusheng, inspired by the classic raw fish and porridge. More than taste and innovation, the chef draws on his Traditional Chinese Medicine roots to meticulously select ingredients which embrace seasonality and nourish the body. And with the restaurant’s stage-like setting, diners are in for a culinary performance – a treat for the eyes and body.

In a grand culmination of Chef Mirko Febbrile’s culinary expertise, Somma – meaning “sum” in Italian – brings the all-in-one concept of an Italian fine dining restaurant, a cocktail and pasta bar, and the Somma Lab to New Bahru. Go from a luxurious 6-course dinner menu (S$258++) which includes dishes like the Lamb Saddle – Chestnut – Mushroom – Quince, and the Slipper Lobster – Spaghettone – Red Carrot – Sea Snails, to a tight selection of pasta like the Radiatori with River Crab and Capocollo di Martina. Not forgetting a cocktail menu that takes you from Aperitivo and Savoury to Renewed Classics. For those master chefs in the making, Somma Lab is a research and cooking school for masterclasses in pasta-making, fermentation, and pastry-making.

Making the hipster enclave Tiong Bahru its home, Fiasco by JUICE is a fuss-free spot for good food and wine. Helmed by Chef Haran Kumar, formerly of Michelin-starred establishments, the restaurant marries Modern European cuisine with Southeast Asian flavours in innovative dishes like Duck and Beetroot (S$32++). The modern take on Peking Duck sees dry-aged duck paired with a twist on traditional Bearnaise with beetroot caramel emulsified with duck fat. Charred Cabbage and Chilli Labneh (S$16++) fuses Mediterranean, French and Asian elements, with a fiery touch from Lao Gan Ma chilli crisp oil. Mami’s Tamales

Mami’s Tamales has launched Asia’s first tamale pop-up restaurant in Singapore, bringing traditional and Asian-inspired tamales to Keong Saik’s vibrant dining scene. Led by Chef Maribel Colmenares and Chef Mauricio Espinoza, Mami’s Tamales offers a festive, home-cooked experience with a lively atmosphere and authentic Mexican artwork. The menu features a variety of tamales, including Chicken Tinga, Pork Salsa Verde, Ayam Sambal Hijau, and Curry Tempe, starting from S$13. Additionally, the pop-up offers Mexican-inspired starters like Mami’s Esquites and Chalupas Poblanas, indulgent desserts such as Mexican Dark Chocolate Quesadilla, and a unique cocktail menu featuring traditional Mexican flavours and inventive twists.

Hayop

Manila’s beloved Filipino restaurant, Manam, has launched its first overseas venture, hayop, in Singapore’s Amoy Street. Founded by The Moment Group in 2012, Manam is known for its hearty, flavourful Filipino cuisine. hayop, a fine casual offshoot, aims to offer a unique dining experience with dishes like House Crispy Sisig, Wagyu & Watermelon Sinigang, and new creations such as Kinilaw and Piyanggang Manok. Led by founders Eliza Antonino and Abba Napa, hayop promises to bring the warmth and festivity of Filipino culture to Singapore. The menu, inspired by classic Filipino fare and enhanced with the best global ingredients, reflects the vibrant culinary traditions of the Philippines. The restaurant’s design also incorporates Filipino artisanal elements, creating an intimate, welcoming atmosphere.

Casa Vostra 

Casa Vostra, a popular Italian food concept renowned for its delivery service, has  opened its first brick-and-mortar dine-in restaurant at Raffles City. Chef-owner Antonio Miscellaneo, whose pizzas at La Bottega were ranked 15th in the Asia-Pacific, has brought over 30 varieties of house-made pizzas and pastas to the new venue. The menu includes unique offerings such as the Newpolitan® Pizza and a first-of-its-kind fried pasta croquette dish called Frittatina. At the new space. Casa Vostra promises an authentic Italian dining experience with dishes made from scratch using premium ingredients.

Sospiri

Sospiri, an authentic Southern Italian restaurant and rooftop bar by ilLido Group, has opened its doors in Singapore’s IOI Central Boulevard Towers. Named after a beloved childhood dessert of founder Beppe De Vito, Sospiri combines the lively ambiance of Roman holiday homes with breathtaking skyline views. The restaurant, led by Michelin-starred Chef Matteo Ponti, offers a menu rich with traditional dishes like Blue Fin Tuna Tartare, homemade Pappardelle with Cardoncelli Mushrooms, and Grilled Swordfish Belly. Traditional desserts like Diplomatica, made with liquor-infused sponge, and Sospiri al Pistacchio, complemented by an Italian-centric beverage list, round out the dining experience. From its contemporary design to its open kitchen and dining area, you’ll feel as comfortable as home as you feast on Hideaway’s exclusive food and drinks menu. When a chef and a fermentation specialist come together, expect a delectable selection of modern European fare at Ingleside made with in-house fermented sauces, dry-aged meats, and wood-fired cooking. The four- course dinner menu (S$128++ per person) sees snacks like the Tuna Tartare Tartelette enriched with housemade maitake shoyu, and the Mozambique Carabinero Prawn flambadou with dry-aged beef fat, shrimp and rose garum for extra kick of umami. Their Hungarian Duck Breast is aged for seven days and served with their lacto blueberry take on bordelaise sauce. The menu features a range of drinks including espresso ale, barista-brewed coffee, and teas like Genmaicha and Matcha. For food, they serve American-style subs with options like Peanut Butter and Jelly, Tuna Melts, Cold Cuts, and Meatballs. Whether you choose to relax outdoors or in their beautifully designed indoor space, the spot lives up to its name as a quick hideout amongst the Singapore hustle and bustle.

Small Batch

The Black Hole Group has introduced Small Batch, a charming new eatery at the Botanic Gardens. The café offers a unique DIY brunch board concept, where diners can choose from over 20 options such as eggs, avocado smash, sautéed mushrooms, burrata cheese, French toast, and bacon rosti, with prices starting at S$15.90 for three items. In addition to the brunch boards, the menu includes á la carte dishes like Mushroom Pesto Malfade and Beef Bolognese Rigatoni. Emphasising quality and artisanality, Small Batch aims to provide a relaxing haven amidst the iconic gardens, complete with a kids’ menu and play area.

Silly Goose

Staying true to the concept, the bar is filled with duck-themed décor, like duck lamps and neon signs. The drinks menu, inspired by iconic hip-hop songs, features sweet concoctions like Gin and Juice, a caramel dessert drink, and Let Me Rye’d, a chocolate and coffee blend. Don’t miss the Silly Sandwich, a delicious combo of slow-cooked pulled beef, provolone, caramelised onions, and fried shallots, served with a rich dipping broth.

Fortuna, Singapore’s first Sicilian-Neapolitan trattoria, has opened in Tanjong Pagar, offering an immersive journey into Italian culture. Celebrating the finest Italian ingredients, the menu features pizzas by master pizzaiolo Giorgio Sorce and pastas and mains by Omar Tutino, trained under Michelin-starred Masterchef Antonino Cannavacciuolo. Andaz Singapore’s 5 ON 25 has reopened, unveiling an array of exquisite new dishes that promise an epicurean delight. Helmed by Chef Lim Hong Lih, the menu blends classic Cantonese flavours with sustainably sourced ingredients. Diners can savour innovative twists on traditional Cantonese cuisine, such as Fried Australian Jumbo Quail Legs and the show-stopping Cantonese-Style Roasted Cage-Free Cherry Valley Duck, flambéed table-side. Other highlights include the Signature Wok-Fried South African Abalone with Green Peppercorn and the Drunken Herbal Anxin Chicken in Aged Shaoxing Wine. Nestled in the heart of Duxton, butter tgt is a charming new café from the acclaimed home baker Youkneadcakes, fresh off their successful stint at Baker X. This cosy café, bathed in warm natural light and adorned with calming, subtle interiors, promises a delightful retreat for cafe dwellers. Among its highlights, the Lemon Berries Cake (S$6.80) offers a moist sponge cake enriched with lemon syrup and mixed berries compote. Their signature made-to-order Madeleines ($7.50 for 3 pcs), are airy and buttery with a hint of zesty. For a savoury treat, the Sourdough with Kombu Miso Butter (S$8) is a must-try. Taking over the space of the former Ghostwriter bar, Idle Hands brings a whimsical alchemy of art, music, and cocktails to Chinatown. Led by Jay Gray, the bar ‘Keeps It Simple Stupid’ without complicated techniques and ingredients, letting natural flavours shine through. Sip from the Sours & Highballs menu with American-Not (S$21++) with coffee, Campari, dark rum, or the Mezcal-based Oxacca Hanky Panky (S$23++) from the Strong & Stirred menu. Low and No ABV options are available too. And if you’ve got a good recipe, share it and you might even make it to their coaster wall of fame!

Big Wine Freaks has opened its doors in the heart of Chinatown, becoming the newest haven for wine and food enthusiasts. Located on Bukit Pasoh Road, this bar boasts over 500 wine labels and 2,000 bottles, all meticulously curated from organic and sustainable micro-farms worldwide. Complementing its extensive wine and champagne selection, the modern food menu features vibrant flavours with a focus on raw seafood, bite-sized starters, and mains from an open fire grill. Daily Beer has landed in Telok Ayer, marking its first international location after establishing over 370 outlets across South Korea since 2014. Known for its high-quality brews and signature Korean dishes, Daily Beer brings it’s casual vibes and authentic Korean flavours to Singapore. The menu boasts eight flavours of fried chicken and seven types of craft beer, including the Busan Hazelnut Porter, Telok Pale Ale, and Seoul Weizen, which pairs perfectly with spicy dishes. Want to try a few more? Dirty Supper

Taking over the space of ex-Bincho is Dirty Supper, an edgy and intimate restaurant with a focus on whole-animal cooking. Catch Chef Peter Smit in the open kitchen for some live grilling action as he brings his unique touches to the table. With a menu that changes depending on the availability of the produce, you’d have to be there to know what they have in the à la carte menu. But expect interesting dishes like Pig Head Nuggets with White Anchovy (S$16++) or Fish Head Terrine with Pickled Lemon (S$20++). Instead of the usual beef tartare, the chef uses Lamb in the Lamb Tartare (S$22++) with Black Garlic and Cured Yolk.

The Masses bring the blessing of good food to their new space at Arcade at The Capitol Kempinski. Set in an alfresco-like setting (with aircon), enjoy signatures like the Duck Confit (S$21.90++) with wok hey rice noodles, or savour new dishes like Smoked Pu Er Caviar & Beignet (S$9.90++ for two pieces). Chef Dylan’s delicious blend of Franco-Asian cuisine gets fun with the C&C&C&C&C&C Pasta (tongue-in-cheek of the 5Cs of Singapore) (from S$18.90++) and a Corn & Cereal (S$13.90) dessert that literally ‘pops’ in your mouth. Creativity soars to new heights here; thankfully, prices remain grounded and accessible.

Introducing Singapore’s first Vintage Vinyl Bar, Little Island Brewing Co. at Gillman Barracks, a pet-friendly establishment boasting a 1950s sound system for authentic retro vinyl tunes. From Waxy Wednesdays to Live bands on weekends, retreat into the lush enclave of The Southern Depot and dig into the outlet-exclusive Vinyl Charcoal Pizza, resembling vinyl records with activated charcoal-infused dough, in playful flavours like Pineapple the Sailor Ham (S$23++). Sip on house brews or something from their long list of spirits and cocktails alongside moreish bites like Little Island Chicken Wings (S$10++).

Slate Bar

Set in a cavernous atmosphere, Slate Bar, the third of Ebb & Flow Group’s offerings at Mondrian Singapore Duxton, features eco-friendly cocktails with Asian influences, alongside delectable  snacks with ingredients sourced from Modern Provision. Sip up a whimsically named It’s Raining Melon, a homage to melon milk, alongside the tantalising Smoke on the Water, featuring house-smoked and spiced capsicum. Looking for something more classic? Expect your favourite sipper, each reimagined with a seasonal twist. Cocktails are S$25++ each.

This new hidden and bespoke whisky and umeshu bar is inspired by the charm of Japan’s book town, Jimbocho. Push through the shelves of manga and to enter Ume Maru for manga and anime inspired cocktails. Coming from the team behind Ume San 100, expect a selection of exclusive whiskies from Indonesia, rare umeshu, and fruit wines, along with a taste of Japan in cocktails like The Light of Nara (S$22), inspired by Princess Mononoke, and Matxha (S$22++) for Matcha Umeshu with a touch of florals. Pair them with yummy snacks like the Wagyu Kushi (S$24++) or go fresh with the cold and tangy Yuzu Soba (S$24++).

As the space transitions into a wine haven from 4pm onwards, guests can enjoy a curated selection of wines and champagnes in collaboration with Grand Vin, featuring prestigious labels like Champagne Louis Roederer and Domaines Barons de Rothschild. The bar also boasts Singapore’s most extensive collection of Louis Roederer Champagnes. Look forward to wine-tasting and meet-and-greet sessions with winemakers in their upcoming programming.
